I have to say the HelloFresh Siracha Pork Chop for Dinner, Bánh Mì Sandwiches for Lunch recipe is one of the best flips of changing from dinner to lunch that I have ever tried. I live alone and HATE leftovers so I am always looking for ways to make batch food but make it different and interesting for the next day.

I have been a very happy HelloFresh customer for a while now. And one of the amazing things is that you can use their recipes even when you don’t get a box. I decided not to get one this week and wanted to find more recipes that converted from dinner to lunch. And have I found the one for you!!!

To make the Sriracha Pork Chop, you start your rice, then pat dry your pork chops and season with salt and pepper and HelloFresh Thai Seasoning. sear those quickly in a pan, then you make this glaze with honey, soy sauce and sriracha to brush on the pork chops. Throw those on half of a baking sheet along with your sugar snap peas that have been drizzled in olive oil and salt and pepper. The recipe didn’t have a temperature for the oven so I cooked them at 350 degrees.

I let everything cook for 7-10 minutes (ended up being more like 10). Then out they came and I plated the pork n the rice and peas.

The pork is so tender because of the quick sear and then oven action.

One of the things I didn’t have, was the Thai Seasoning because I didn’t get the box. So I scoured the internet until I could find it. Reddit does not disappoint. Keep scrolling to see the recipe.

While everything is in the oven you prep for lunch which involves peeling and pickling the carrots and I made sriracha, sour cream spread instead of making them into different elements. You end up making your dinner and prepping for lunch at the same time. Brilliant!

5 Stars!!! Putting together the Pork Bahn Mi Sandwich ended up being super easy and I was able to assemble it in the break room at work.

I started with a baguette chunk that I toasted because it was in the fridge and I didn’t want cold bread. I sliced up the pork chop from the night before and warmed it up in the microwave. Sriracha, sour cream mix was slathered on the bread along with a drizzle of the glaze from the pork. Stacked on top of that were the pork, pickled carrot strips, and cilantro. And I am one of those people that use to HATE cilantro but now it’s part of my love language, like garlic.

Squish it all together and voila! SOOOOOOOO YUMMMMYY!!
